Wild rice is high in protein, the amino acid lysine and dietary fiber, and low in fat.
Ingredients
1 teaspoon olive oil
 ¼ cup finely chopped onion
¼ cup finely chopped carrot
¼ cup finely chopped celery
1 garlic clove, minced
½ teaspoon dried thyme
¼ cup dried cranberries
1 cup low-sodium chicken broth
¾ cup wild rice, rinsed under cold water  

Directions
 Heat olive oil in a saucepan. Add onion, carrot, celery, and garlic, and sauté until softened. Add thyme, dried cranberries, and broth.  

Add rice to the vegetables and cook about 30 minutes.
Serve as a side dish.
